Vegan banana muffins

Muffins veganos de plátano

The other day on Instagram you asked me the recipe for these vegan banana muffins. They are very healthy and fiber rich.

Here is the receipe for 12 muffins:

  • 4 ripe bananas
  • 1/2 cup of whole cane suger
  • 1 and 1/2 cup of wholemeal flour with yeast
  • 1 teaspoon of bicarbonate
  • 1/2 cup of olive oil
  • 1/4 cup of raisins
  • 1/4 cup of walnuts

I use a flour that already incorporates yeast. If you use other flour you can add a teaspoon of baking powder.

Put all ingredients in a bowl except raisins and walnuts and beat with a whisk. Then add the remaining ingredients and mix.

Put the dough in a muffin tin with baking paper and put 30 minutes in the preheated oven at 180 degrees.

Once they are baked let them cool for a while and then they’re ready for breakfast or for a snack.
